Zuppa Toscana (Olive Garden Copycat)

Experience the rich flavors of Zuppa Toscana with this Olive Garden copycat recipe featuring turkey bacon and chicken ham.

Ingredients

  • 1 lb ground turkey
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 5 cups chicken broth
  • 2 cups kale, chopped
  • 2 large potatoes, diced
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add ground turkey to the pot, cooking until browned.
  3. Stir in onion and garlic, cooking until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Add potatoes and cook until tender, about 15 minutes.
  6. Stir in kale and cook for another 5 minutes.
  7. Reduce heat and stir in heavy cream, season with salt and pepper.
  8. Chop the turkey bacon and add back to the pot. Stir to combine.
  9. Serve hot.

Notes

  • Feel free to adjust the seasoning to taste.
  • For added flavor, you can include red pepper flakes.
