  • 4 cups sliced zucchini
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine egg and olive oil. Mix well.
  3. In another bowl, mix breadcrumbs, Parmesan cheese, and Italian seasoning.
  4. Dip zucchini slices in the egg mixture, then coat with the breadcrumb mixture.
  5. Layer half of the zucchini in a baking dish and cover with half of the marinara sauce.
  6. Repeat the layers with the remaining zucchini and sauce.
  7. Bake for 30-35 minutes until golden brown.
