Weeknight Tomato and Zucchini Pasta

A delicious and easy weeknight meal featuring fresh tomatoes and zucchini.

Ingredients

  • 2 cups cherry tomatoes
  • 1 medium zucchini
  • 8 ounces pasta (spaghetti or your choice)
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil

Instructions

  1. Cook pasta according to package instructions.
  2. While pasta is cooking, heat olive oil in a pan over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add sliced zucchini and cook until tender.
  5. Add halved cherry tomatoes, salt, and pepper, and cook for another 2-3 minutes.
  6. Drain pasta and add to the vegetable mixture.
  7. Toss everything together and serve hot, garnished with fresh basil.

Notes

  • Can substitute zucchini with yellow squash.
  • Add grated Parmesan for extra flavor.
