Vegan Gambian Peanut Stew (Domoda)

A delicious and hearty Vegan Gambian Peanut Stew, also known as Domoda, that brings comfort with every bite.

Ingredients

  • 1 cup peanuts
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 cups sweet potatoes, diced
  • 2 cups vegetable broth
  • 1 can coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1 bell pepper, diced
  • 2 cups spinach
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the diced onion, garlic, and ginger; sauté until softened.
  3. Stir in the sweet potatoes, vegetable broth, and bring to a boil.
  4. Reduce heat and simmer until sweet potatoes are tender.
  5. Stir in the peanut butter and coconut milk, mix well.
  6. Add the spices and bell pepper, cook for a few more minutes.
  7. Finally, stir in the spinach and cook until wilted.
  8. Season with salt and serve hot.
