- 2 tablespoons vegetable oil
- 1 large onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 2 cups sweet potatoes, diced
- 2 cups vegetable broth
- 1 can coconut milk
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1 bell pepper, diced
- 2 cups spinach
- Salt to taste
- In a large pot, heat the vegetable oil over medium heat.
- Add the diced onion, garlic, and ginger; sauté until softened.
- Stir in the sweet potatoes, vegetable broth, and bring to a boil.
