A delicious and easy vegan twist on a classic brunch dish, this Vegan French Toast Casserole is perfect for sharing.

  • 1 loaf bread (preferably stale or day-old)
  • 2 cups almond milk
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together almond milk, maple syrup, applesauce, cinnamon, vanilla, nutmeg, and salt.
  3. Tear the bread into pieces and soak in the mixture for about 10 minutes.
  4. Transfer the bread mixture to a baking dish and top with walnuts if using.
  5. Bake for 45-50 minutes, until golden and set.
  6. Let cool for a few minutes before serving.

Notes

  • This casserole can be made the night before and baked in the morning.
