Twice-Baked Potato Casserole

  • 4 large russet potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked turkey bacon, chopped
  • 2 green onions, sliced
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the russet potatoes, then bake for 1 hour or until tender.
  3. Let the potatoes cool, then scoop out the insides into a bowl.
  4. Add sour cream, milk, cheese, turkey bacon, green onions, garlic powder, salt, and pepper to the potatoes and mix until smooth.
  5. Transfer the mixture back into the potato skins and place them in a baking dish.
  6. Bake for an additional 20-25 minutes or until heated through and cheese is bubbly.
