Tomato Basil Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft.
  3. Stir in minced garlic and cook for another minute.
  4. Add crushed tomatoes, vegetable broth, sugar, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add chopped basil and heavy cream. Blend until smooth.
  7. Serve hot with crusty bread.

Notes

  • For a vegan option, omit the heavy cream or substitute with coconut cream.
  • Add a pinch of red pepper flakes for extra heat.
