  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil leaves
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cook for another minute.
  3. Stir in the crushed tomatoes, vegetable broth, sugar, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Add the fresh basil leaves and heavy cream. Blend the mixture until smooth using an immersion blender.
  5. Serve hot, garnished with additional basil if desired.

Notes

  • For a vegan version, omit the heavy cream or substitute with coconut cream.
