6 egg yolks
3/4 cup granulated sugar
2 cups mascarpone cheese
1 1/2 cups heavy cream
1 cup espresso, cooled
2 tablespoons coffee liqueur
24 ladyfingers
2 tablespoons cocoa powder
Instructions
In a bowl, whisk together egg yolks and sugar until pale and thick.
Add mascarpone cheese and mix until smooth.
In a separate bowl, whip heavy cream until stiff peaks form.
Fold the whipped cream into the mascarpone mixture gently.
In another bowl, combine cooled espresso and coffee liqueur.
Dip ladyfingers briefly in the coffee mixture and layer them in a dish.
Spread half of the mascarpone mixture over the ladyfingers.
Repeat layers, finishing with the mascarpone mixture.
Chill in the refrigerator for at least 4 hours.
Before serving, dust with cocoa powder.
Notes
For a stronger coffee flavor, use dark roast espresso.
