- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Preheat oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them in olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a bowl, combine black beans, corn, diced tomatoes, and cilantro.
- Once sweet potatoes are roasted, assemble the bowls with sweet potatoes, the bean mixture, and top with diced avocado.
