Sweet Potato Taco Bowl

A delicious and healthy Sweet Potato Taco Bowl that is easy to make and perfect for all ages.

Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them in olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a bowl, combine black beans, corn, diced tomatoes, and cilantro.
  5. Once sweet potatoes are roasted, assemble the bowls with sweet potatoes, the bean mixture, and top with diced avocado.
