  • 2 cups sweet potatoes, mashed
  • 1/4 cup milk
  • 1/4 cup sugar
  • 1 package active dry yeast
  • 4 cups all-purpose flour
  • 1/2 cup butter, melted
  • 1 teaspoon salt
  • 2 large eggs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix mashed sweet potatoes, milk, and sugar.
  3. Sprinkle yeast over the mixture and let it sit for about 5 minutes.
  4. In another bowl, combine flour and salt.
  5. Add the sweet potato mixture and melted butter to the flour, mixing until combined.
  6. Add eggs and knead the dough until smooth.
  7. Cover the dough and let it rise for 1 hour.
  8. Shape the rolls and place them on a greased baking sheet.
  9. Let the rolls rise for another 30 minutes.
  10. Bake for 25-30 minutes or until golden brown.

Notes

  • For best results, use warm sweet potatoes.
