  • 1 pound chicken breasts
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 2 cups frozen mixed vegetables
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk

Instructions

  1. Cook the turkey bacon in a large pot until crisp, then remove and crumble.
  2. In the same pot, add chicken breasts and cook until no longer pink.
  3. Stir in chicken broth and bring to a boil.
  4. Add the frozen mixed vegetables and let simmer.
  5. In a bowl, mix flour, baking powder, salt, and pepper. Stir in milk to form a batter.
  6. Drop spoonfuls of batter into the simmering soup.
  7. Cover and cook for 15 minutes without lifting the lid.
  8. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a richer flavor, you can sauté onions and garlic in the pot before adding the chicken.
