- 2 tablespoons olive oil
- 1 pound chicken thighs, boneless and skinless
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- 2 cups frozen peas
- 1 cup heavy cream
- 1 tablespoon fresh parsley, chopped
- Heat olive oil in a large pot over medium heat.
- Add chicken thighs and cook until browned, about 5 minutes on each side.
- Remove chicken and set aside. Add onion, carrots, and celery to the pot. Sauté until soft, about 7 minutes.
- Pour in the chicken broth and stir in thyme, rosemary, and garlic powder.
- Bring to a boil, then reduce heat. Return the chicken to the pot and simmer for 20 minutes.
- Remove chicken, chop it, and return to the pot along with frozen peas and heavy cream.
- Cook for an additional 5 minutes, and garnish with fresh parsley before serving.
Notes
- For a thicker broth, add a slurry of cornstarch and water.
- Feel free to use leftover chicken for a quicker version.
