  • 2 tablespoons olive oil
  • 1 pound chicken thighs, boneless and skinless
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 2 cups frozen peas
  • 1 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs and cook until browned, about 5 minutes on each side.
  3. Remove chicken and set aside. Add onion, carrots, and celery to the pot. Sauté until soft, about 7 minutes.
  4. Pour in the chicken broth and stir in thyme, rosemary, and garlic powder.
  5. Bring to a boil, then reduce heat. Return the chicken to the pot and simmer for 20 minutes.
  6. Remove chicken, chop it, and return to the pot along with frozen peas and heavy cream.
  7. Cook for an additional 5 minutes, and garnish with fresh parsley before serving.

Notes

  • For a thicker broth, add a slurry of cornstarch and water.
  • Feel free to use leftover chicken for a quicker version.
