Spinach, Chickpea, and Chicken Pitas

A healthy and easy-to-make meal featuring protein-rich chickpeas and chicken, packed with nutrients from fresh spinach.

Ingredients

  • 2 cups fresh spinach
  • 1 can chickpeas, rinsed and drained
  • 1 pound cooked chicken, shredded
  • 4 whole wheat pita breads
  • 1 teaspoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add chickpeas, garlic powder, cumin, salt, and pepper. Sauté for about 5 minutes.
  3. In a mixing bowl, combine sautéed chickpeas, shredded chicken, and fresh spinach.
  4. Warm pita breads in the skillet for about 1 minute on each side.
  5. Stuff pita breads with the chickpea and chicken mixture.

Notes

  • Add avocado for extra creaminess.
  • Use whole grain pita for added fiber.
