Southwest Pasta Salad

A delicious and easy-to-make Southwest Pasta Salad that combines flavors of turkey bacon with fresh vegetables.

Ingredients

  • 8 ounces elbow macaroni
  • 4 slices turkey bacon
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup ranch dressing
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder

Instructions

  1. Cook the elbow macaroni according to package instructions, drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then crumble it into pieces.
  3. In a large mixing bowl, combine the cooked macaroni, turkey bacon, bell pepper, cherry tomatoes, corn, red onion, and cilantro.
  4. In a separate bowl, whisk together ranch dressing, lime juice, and chili powder.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicy kick, add diced jalapeños.
  • Feel free to substitute the turkey bacon with regular bacon if desired.
