Southwest Egg Rolls Recipe

Learn how to make delicious Southwest Egg Rolls filled with turkey bacon and chicken ham.

  • 1 cup cooked chicken, shredded
  • 1/2 cup turkey bacon, cooked and chopped
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, drained
  • 1/2 cup bell peppers, diced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 cup green onions, chopped
  • 1 cup shredded cheese
  • 8 egg roll wrappers
  • oil for frying

Instructions

  1. In a large bowl, combine the chicken, turkey bacon, black beans, corn, bell peppers, chili powder, cumin, green onions, and cheese.
  2. Lay an egg roll wrapper on a flat surface with a corner pointing towards you.
  3. Place a generous spoonful of the filling in the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold in the sides, and roll tightly.
  5. Heat oil in a frying pan over medium heat and fry the egg rolls until golden brown on all sides.
  6. Drain on paper towels and serve hot.
