Ingredients

  • 1 cup warm water
  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 tablespoon salt
  • 1/4 cup baking soda
  • 8 ounces mozzarella cheese, cut into small cubes
  • 1 egg, beaten
  • coarse sea salt for sprinkling

Instructions

  1. In a mixing bowl, combine warm water and yeast, letting it sit for 5 minutes until frothy.
  2. Add flour and salt, mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes.
  4. Let the dough rise in a greased bowl, covered, for 1 hour.
  5. Preheat the oven to 450°F (232°C).
  6. Divide dough into equal pieces, flatten each piece, and place a cube of mozzarella in the center before folding the dough over.
  7. Form the dough into a pretzel shape, and boil in a mixture of water and baking soda for 30 seconds.
  8. Place on a baking sheet, brush with beaten egg, and sprinkle with coarse sea salt.
  9. Bake for 12-15 minutes until golden brown.
