  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 bell pepper, sliced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup mushrooms, sliced
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add chicken broth, coconut milk, red curry paste, fish sauce, lime juice, bell pepper, carrots, onion, garlic, and ginger.
  3. Stir to combine and cook on low for 6-8 hours.
  4. In the last hour, add mushrooms.
  5. Remove chicken, shred it, and return it to the soup.
  6. Garnish with green onions and cilantro before serving.

Notes

  • For extra heat, add more red curry paste.
  • Can be served with rice or noodles.
