- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can coconut milk
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 bell pepper, sliced
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup mushrooms, sliced
- 2 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- Place chicken breasts in the slow cooker.
- Add chicken broth, coconut milk, red curry paste, fish sauce, lime juice, bell pepper, carrots, onion, garlic, and ginger.
- Stir to combine and cook on low for 6-8 hours.
- In the last hour, add mushrooms.
