Slow Cooker Pork Carnitas

  • 3 pounds pork shoulder
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 2 limes, juiced
  • 1 onion, chopped
  • 4 cloves garlic, minced

Instructions

  1. In a bowl, mix together the chili powder, cumin, onion powder, garlic powder, salt, and pepper.
  2. Rub the spice mixture all over the pork shoulder.
  3. Place the pork in the slow cooker and add the chicken broth, lime juice, onion, and garlic.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the pork is tender.
  5. Shred the pork with two forks and mix with the juices in the slow cooker before serving.
