Slow Cooker Lemon Herb Chicken and Rice

A delicious and easy recipe for lemon herb chicken and rice made in a slow cooker, perfect for a weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In the slow cooker, combine the chicken, rice, chicken broth, lemon juice, lemon zest, garlic, thyme, olive oil, salt, and pepper.
  2. Stir to mix well and ensure the chicken is submerged in the broth.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 20 minutes before serving, add the frozen peas.
  5. Once done, shred the chicken and fluff the rice before serving.
