  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 cups egg noodles
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup frozen peas

Instructions

  1. Season the beef roast with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat. Sear the meat on all sides until browned.
  3. Transfer the beef to the slow cooker and add the chopped onion, garlic, beef broth, Worcestershire sauce, and thyme.
  4. Cook on low for 7-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the egg noodles and peas, and stir to combine.
  6. Shred the beef before serving, and mix everything well.

Notes

  • For a thicker gravy, let the mixture simmer on high for another 30 minutes after adding the noodles.
  • Customize the vegetables by adding carrots or mushrooms if desired.
