  • 1 pound ground beef
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat and brown the ground beef until cooked through.
  3. Add the frozen peas and carrots, beef broth, Worcestershire sauce, garlic powder, and onion powder to the skillet. Stir to combine.
  4. Simmer the mixture for about 10 minutes, allowing it to thicken.
  5. While the meat mixture simmers, cut the baked potatoes in half and scoop out a small amount of the flesh to create a well.
  6. Fill each potato half with the meat mixture and top with shredded cheddar cheese.
  7. Bake in the oven for about 20 minutes, or until the cheese is melted and bubbly.
  8. Sprinkle chopped parsley on top before serving.

  • For a vegetarian option, substitute ground beef with lentils or mushrooms.
  • You can use instant mashed potatoes instead for a quicker preparation.
