  • 1 pound boneless chicken thighs
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 4 cups shredded cabbage
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 1 jalapeño, thinly sliced
  • 1 lime, juiced
  • 2 tablespoons cilantro, chopped

Instructions

  1. In a bowl, mix sesame oil, soy sauce, honey, rice vinegar, garlic powder, and ginger powder.
  2. Add chicken thighs to the marinade and let sit for at least 30 minutes.
  3. In a large pan, cook the marinated chicken over medium heat until fully cooked.
  4. In another bowl, combine cabbage, bell pepper, green onions, jalapeño, lime juice, and cilantro for the slaw.
  5. Serve the chicken with the chili lime slaw on the side.

Notes

  • For a spicier slaw, add more jalapeño.
  • Use chicken breast instead of thighs for a leaner option.
