Seafood Pot Pie (with Cheddar Bay Crust)

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 cup frozen green peas
  • 3 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice
  • 1 batch Cheddar Bay biscuit dough

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, melt the butter over medium heat. Add the onions and carrots, and sauté until softened.
  3. Stir in the flour, and cook for 1-2 minutes.
  4. Gradually add seafood stock and heavy cream, stirring continuously.
  5. Add the shrimp, scallops, peas, salt, pepper, thyme, and lemon juice. Cook until the seafood is just cooked through.
  6. Transfer the seafood mixture into a pie dish and top with Cheddar Bay biscuit dough.
  7. Bake for 30-35 minutes, or until the crust is golden brown.
  8. Let it cool slightly before serving.

  • This pot pie is best served fresh, but leftovers can be reheated.
