- 1 pound shrimp, peeled and deveined
- 1 pound scallops
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup frozen green peas
- 3 cups seafood stock
- 1 cup heavy cream
- 1/2 cup all-purpose flour
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon lemon juice
- 1 batch Cheddar Bay biscuit dough
- Preheat the oven to 375°F (190°C).
- In a large pot, melt the butter over medium heat. Add the onions and carrots, and sauté until softened.
- Stir in the flour, and cook for 1-2 minutes.
- Gradually add seafood stock and heavy cream, stirring continuously.
- Add the shrimp, scallops, peas, salt, pepper, thyme, and lemon juice. Cook until the seafood is just cooked through.
- Transfer the seafood mixture into a pie dish and top with Cheddar Bay biscuit dough.
- Bake for 30-35 minutes, or until the crust is golden brown.
- Let it cool slightly before serving.
