Sausage Soup Delight: Hearty and Healthy with Turkey Bacon

SAUSAGE SOUP

A delicious and healthy sausage soup made with turkey bacon, packed with flavors and nutrients.

Ingredients

  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • 2 cups spinach, chopped
  • 1 can (15 oz) white beans, rinsed and drained

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Sauté onion, garlic, carrots, and celery in the bacon drippings until tender.
  3. Add chicken broth, diced tomatoes, Italian seasoning, and black pepper. Bring to a boil.
  4. Stir in spinach and white beans, and simmer for 10 minutes.
  5. Return crumbled bacon to the pot and serve hot.

Notes

  • Feel free to add other vegetables such as zucchini or bell peppers.
  • Top with grated Parmesan cheese for extra flavor.
