Roasted Potato Salad

A delicious roasted potato salad that incorporates turkey bacon for a delightful twist.

  • 2 pounds baby potatoes
  • 6 slices turkey bacon
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the baby potatoes in half.
  3. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until golden brown.
  4. Meanwhile, cook the turkey bacon in a skillet until crispy, then chop into small pieces.
  5. In a large bowl, combine the roasted potatoes, turkey bacon, green onions, and parsley.
  6. In a separate bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper. Pour dressing over the potato mixture and toss to combine.
  7. Serve warm or refrigerate to serve cold.
