Roasted Garlic Soup – Rich and Creamy

A comforting and rich roasted garlic soup that warms the soul.

Ingredients

  • 3 heads garlic
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Freshly ground pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the tops off the garlic heads and drizzle with olive oil. Wrap in foil and roast for 30-35 minutes.
  3. In a pot, sauté the onion until translucent.
  4. Add the roasted garlic, vegetable broth, and bring to a simmer.
  5. Puree the soup with an immersion blender.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made a day ahead and reheated before serving.
  • Adjust the cream quantity for a lighter version.
