  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fill the cupcake liners about 2/3 full and bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Let cupcakes cool completely before frosting.
  7. To make the frosting, beat together the cream cheese and butter until smooth.
  8. Gradually add the powdered sugar and vanilla, mixing until fluffy.
  9. Spread or pipe the frosting onto the cooled cupcakes.
