Ingredients

  • 4 large potatoes
  • 2 leeks
  • 4 cups vegetable broth
  • 1 cup cream
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash and chop the leeks and potatoes.
  2. In a large pot, melt the butter over medium heat.
  3. Add the leeks and sauté until soft.
  4. Add the potatoes and vegetable broth, bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
  6. Blend the soup until smooth, then stir in the cream.
  7. Season with salt and pepper to taste.
