  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup raspberry puree
  • 2 tablespoons red food coloring

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined.
  4. Add the vanilla extract, eggs, and sour cream into the cream cheese mixture and continue to beat until smooth.
  5. Gently fold in the raspberry puree and red food coloring to achieve a uniform color.
  6. Pour the cheesecake filling over the prepared crust and spread it evenly.
  7. Bake in the preheated oven for about 50-60 minutes, or until the center is set.
  8. Allow the cheesecake to cool before refrigerating it for at least 4 hours or overnight.
  9. Serve chilled, garnished with fresh raspberries if desired.
