  • 12 ounces pasta
  • 2 tablespoons olive oil
  • 1 medium eggplant, diced
  • 3 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup fresh basil, chopped
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced eggplant and cook until soft.
  3. Add minced garlic and cook for 1 minute.
  4. Stir in crushed tomatoes, red pepper flakes, salt, and black pepper. Simmer for 10 minutes.
  5. Mix cooked pasta into the sauce and toss to coat.
  6. Remove from heat and fold in fresh basil and Parmesan cheese.
  7. Serve hot and enjoy!
