Orzo with Roasted Vegetables

  • 2 cups mixed vegetables (bell peppers, zucchini, eggplant)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the mixed vegetables with olive oil, salt, pepper, and Italian seasoning on a baking sheet.
  3. Roast the vegetables for 25-30 minutes, stirring halfway through, until tender.
  4. While the vegetables roast, cook the orzo according to package instructions until al dente.
  5. Drain the orzo and mix it with the roasted vegetables and Parmesan cheese.
