4 pieces chicken thighs
2 cups rice
1 tablespoon jerk seasoning
1 cup chicken broth
1 cup coconut milk
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 green onions, sliced
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Season the chicken thighs with jerk seasoning, salt, and pepper.
In a large pot, heat oil over medium heat and brown the chicken on both sides.
Add onion, garlic, and bell peppers, cooking until softened.
Stir in the rice, chicken broth, and coconut milk.
Bring to a boil, then reduce heat, cover, and simmer until rice is cooked.
Garnish with green onions before serving.
Notes
Feel free to adjust the spice level by adding more or less jerk seasoning.
Serve with fresh lime wedges for an added burst of flavor.
