  • 1/4 cup unsalted butter, softened
  • 1/2 cup grapefruit juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 tablespoon grapefruit zest
  • 1 tablespoon brown sugar
  • 1 grapefruit, segmented

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and grapefruit zest, mixing well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with grapefruit juice, until just combined.
  6. In greased muffin tins, sprinkle brown sugar and place grapefruit segments at the bottom.
  7. Scoop the batter over the grapefruit segments.
  8. Bake for about 20-25 minutes or until a toothpick comes out clean.
  9. Let cool briefly before inverting onto a plate.
