  • 1 pound lobster meat
  • 1 pound scallops
  • 4 cups fish stock
  • 2 cups heavy cream
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery and sauté until soft.
  2. Stir in the garlic, thyme, and diced potatoes, cooking for an additional 2 minutes.
  3. Add the fish stock and bring to a simmer. Cook until the potatoes are tender.
  4. Pour in the heavy cream and bring the chowder back to a low simmer.
  5. Add the lobster meat and scallops, cooking for about 5-7 minutes until they are cooked through.
  6. Season with salt and pepper to taste before serving.
