- 6 large potatoes, peeled and diced
- 4 strips turkey bacon, cooked and crumbled
- 1 cup chicken ham, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté the onion and garlic until translucent.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Stir in the heavy cream, salt, pepper, and paprika.
- Using a potato masher, mash some of the potatoes for a creamy texture.
- Mix in the chicken ham and half of the crumbled bacon.
- Serve hot, topped with cheddar cheese, remaining bacon, and green onions.
