Lentil & Rice Vegan Cabbage Rolls

These delicious lentil and rice vegan cabbage rolls are the perfect comfort food, packed with flavor and nutrients.

Ingredients

  • 1 cup lentils
  • 1 cup cooked rice
  • 1 head cabbage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar marinara sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a pan, sauté the onion and garlic until translucent.
  3. Add the lentils, rice, cumin, paprika, salt, and pepper to the pan and mix well.
  4. Remove cabbage leaves carefully and blanch them in boiling water until soft.
  5. Fill each cabbage leaf with the lentil and rice mixture and roll tightly.
  6. Place the rolls in a baking dish and cover with marinara sauce.
  7. Bake for 30 minutes.

Notes

  • For extra flavor, add fresh herbs to the lentil mixture.
  • You can use different types of sauce if preferred.
