  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the sugar and butter until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk, lemon zest, and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill each cupcake liner about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For an extra zing, add lemon juice to the frosting.
  • These cupcakes can be topped with a glaze or frosting of your choice.
