Jamaican Curry Chicken

An easy recipe for making flavorful Jamaican Curry Chicken at home.

  • 2 pounds chicken pieces
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 Scotch bonnet pepper, whole

Instructions

  1. In a bowl, combine chicken pieces with curry powder, salt, and black pepper. Mix well and let marinate for at least 30 minutes.
  2. Heat vegetable oil in a large pot over medium heat. Add chopped onion, garlic, and ginger, and sauté until fragrant.
  3. Add marinated chicken to the pot and brown on all sides.
  4. Stir in chopped bell pepper and chicken broth, then add the Scotch bonnet pepper.
  5. Bring to a simmer, cover, and cook for 30-40 minutes or until chicken is tender.
  6. Taste and adjust seasoning before serving.

Notes

  • For added flavor, let the chicken marinate overnight.
  • Serve with rice and peas for a complete meal.
