  • 4 large leeks
  • 4 medium potatoes
  • 4 slices turkey bacon
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and chop the leeks, ensuring to remove any dirt.
  2. Peel and dice the potatoes.
  3. Set the Instant Pot to sauté and cook the turkey bacon until crisp.
  4. Add the leeks and garlic, sautéing until soft.
  5. Stir in the potatoes, chicken broth, salt, and pepper.
  6. Close the lid and cook on high pressure for 15 minutes.
  7. Once done, quick release the pressure and blend the soup until smooth.
  8. Stir in the heavy cream and adjust seasoning to taste.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
