Instant Pot Chicken Tortellini Soup

A comforting and simple Instant Pot Chicken Tortellini Soup packed with flavor.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breasts, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup frozen spinach
  • 9 ounces cheese tortellini
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Turn on the Instant Pot and select the ‘Sauté’ function. Add olive oil.
  2. Add the diced chicken and cook until browned on all sides.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in the chicken broth, diced tomatoes, and Italian seasoning. Close the lid.
  5. Set to ‘Pressure Cook’ for 5 minutes.
  6. Once cooking is complete, do a quick release. Stir in the spinach and tortellini.
  7. Set the pot to ‘Sauté’ again and cook until tortellini are tender.
  8. Stir in the heavy cream and adjust seasoning with salt and pepper.

Notes

  • Feel free to add more vegetables according to your preference.
  • This soup is best enjoyed fresh but can be stored in the fridge for a few days.
