- 3 pounds boneless beef chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 carrots, chopped
- 1 onion, chopped
- 2 sprigs fresh rosemary
- Preheat your oven to 325°F (165°C).
- In a large oven-safe pot, heat olive oil over medium-high heat. Season the roast with salt and pepper.
- Sear the roast on all sides until browned, about 5 minutes per side.
- Remove the roast and set aside. In the same pot, add garlic, carrots, and onion. Sauté for 3-4 minutes.
- Return the roast to the pot, add beef broth and Worcestershire sauce. Add rosemary sprigs on top.
- Cover and transfer to the oven. Cook for 3-4 hours until the meat is tender.
- Remove from oven and let it rest for 15 minutes before slicing.
