Ingredients

  • 2 heads of garlic
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the tops off the garlic heads, drizzle with olive oil, and wrap in foil.
  3. Roast in the oven for 30-35 minutes until soft.
  4. In a pot, sauté the onion until translucent.
  5. Remove the garlic from the oven, squeeze the cloves into the pot, and stir.
  6. Add the vegetable broth and bring to a boil.
  7. Simmer for 10 minutes, then blend until smooth.
  8. Stir in the heavy cream, season with salt and pepper, and serve hot.
