Easy Chicken and Rice Soup

Ingredients

  • 1 pound boneless chicken breasts
  • 1 cup white rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrot, and celery, sauté until softened.
  3. Add garlic, cook for an additional minute.
  4. Stir in chicken broth, thyme, salt, and pepper, bring to a boil.
  5. Add chicken, cover, and simmer for 20 minutes.
  6. Remove chicken, shred, and return to the pot.
  7. Add rice and lemon juice, cook until rice is tender.
  8. Serve hot.
