  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mash the ripe bananas until smooth.
  3. In a separate bowl, mix together the dry ingredients: cocoa powder, flour, baking soda, and salt.
  4. In another large bowl, cream the butter with the granulated and brown sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  6. Mix the mashed bananas into the butter mixture.
  7. Alternate adding the dry ingredients and buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  8. Fold in the chocolate chips.
  9. Divide the batter evenly between the prepared pans.
  10. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  11. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  12. Once cooled, layer and frost as desired.

Notes

  • For extra flavor, consider adding a pinch of espresso powder to the batter.
  • Make sure the bananas are very ripe for the best flavor.
