Crockpot Thai Coconut Chicken Soup

Ingredients

  • 1 pound chicken thighs
  • 1 can coconut milk
  • 4 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 limes, juiced
  • 1 cup mushrooms, sliced
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, sliced
  • fresh cilantro for garnish

Instructions

  1. In a crockpot, combine chicken thighs, coconut milk, chicken broth, red curry paste, and fish sauce.
  2. Add the mushrooms, bell pepper, onion, garlic, and ginger.
  3. Cook on low for 6 hours or until chicken is cooked through.
  4. Remove chicken, shred it, and return it to the pot.
  5. Stir in lime juice and garnish with green onions and cilantro before serving.

Notes

  • Serve with rice for a complete meal.
  • Adjust the spice level by adding more or less curry paste.
