Crockpot Minestrone Soup

This Crockpot Minestrone Soup is a comforting and healthy dish that features turkey bacon for a delicious twist.

Ingredients

  • 4 strips turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 1 cup green beans, chopped
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste
  • 2 cups fresh spinach

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same skillet, sauté onions and garlic until translucent.
  3. Add sautéed onion, garlic, turkey bacon, broth, tomatoes, beans, carrots, zucchini, green beans, basil, oregano, salt, and pepper to the crockpot.
  4. Cook on low for 6 hours or high for 3 hours.
  5. Stir in fresh spinach just before serving.

Notes

  • For added flavor, you can include Parmesan cheese when serving.
  • Feel free to use any seasonal vegetables.
