  • 4 slices turkey bacon
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped onions
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper

Instructions

  1. In a large crock pot, place the turkey bacon and turn on high to allow it to render its fat.
  2. Add the diced potatoes, carrots, onions, chicken broth, diced tomatoes, garlic powder, thyme, and black pepper.
  3. Stir until well combined.
  4. Cover with the lid and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once done, adjust seasoning as needed and serve hot.

Notes

  • This stew can be customized with any vegetables you have on hand.
  • For a thicker stew, mash some of the potatoes before serving.
