- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups kale, chopped
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, cooking until softened.
- Add the mushrooms and cook until they release their juices.
- Stir in the wild rice, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until rice is tender.
