  • 1 cup green enchilada sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 bell pepper, diced
  • 1 cup shredded cheese

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add in the shredded chicken and bell pepper, cooking for about 5 minutes.
  3. Stir in the green enchilada sauce, chicken broth, corn, tomatoes, cumin, and chili powder.
  4. Bring to a simmer and cook for 20 minutes.
